Domaine Rosier
Michel Rosier is originally from Champagne which is not a disadvantage when you produce sparkling wine.
In 1531, the monks of the Benedictine abbey of Saint-Hilaire, close to Limoux, produced in their cellars an unusual white wine which naturally takes foam in its bottle of cork stopped glass tracing back to Limoux the origins of the first effervescent wines in the world.
In a sense you could say that Michel made it back to its origin since the wines of Limoux are namely the world’s oldest sparkling wine and the legend says that it was here that Dom Perignon, at his time discovered the sparkling wine.

Domaine Rosier plants 35 hectares of AOC grapevines situated at the Villelongue d’Aude.
Rosier wines are made using blends of Chardonnay, Mauzac, Chenin and Pinot grapes. The vineyard is cultivated without the use of any chemical fertilizers, a process that continues to ensure a juice of the highest quality.
